Raspberry or Strawberry Sauce

Rasperry or Strawberry Sauce

  • 12 ounce bag frozen berries
  • 2 tablespoons sugar, or to taste
  • 2 tablespoons corn starch dissolved in 4 tablespoons water
  • 1 cup pure water
  • 1 tablespoon orange liqueur or framboise (optional)


Bring berries, water and sugar to a boil. Reduce heat and simmer for a few minutes to break up the pulp. Remove from heat and pass through a strainer to capture seeds, saving as much of the pulp as possible. Return to saucepan and heat again. Add cornstarch mixture a little at a time until thickened to desired consistency, stirring constantly. Remove from heat and add liqueur. Sauce can be made ahead and kept in the freezer for months. Purple berries can also be used. Just add 1 tablespoon of lemon juice.
